I love, love, love, LOVE artichokes and this strata highlights their amazingness. I used jarred artichokes instead of frozen because we always have jarred artichokes hanging around in our cupboards.
This meal looked so fancy coming out of the oven, and when I scooped it onto my plate I was delighted by the crust and couldn't wait to dig in to the crustiness.

So overall, vegetarian week was great! Most of my family wasn't exactly thrilled about it, and they're probably relieved that it's over. I didn't really notice a significant difference in how I felt, which means I was neither more or less energized. I am ready to get back to incorporating meat into my diet, but I think I'll try and start a day a week with no meat. Meatless Mondays anyone?

Vegetarian Day #6: Vegetable Fried Rice
We had brown rice leftover from the curry the day before and I wanted to put it to good use. Making fried rice is probably the easiest way to make sure leftover rice doesn't go to waste. All you have to do is toss it into a pan with whatever else you have lying around and, voila, perfect meal!
This time around I added shredded carrots, peas, edamame, celery, sun-dried tomatoes, soy-sauce, hoisin, ginger, garlic, salt, and pepper!

Vegetarian Day #5: Vegetable Curry
So obviously my vegetarian week actually ended a while ago, but I just haven't gotten around to posting. I get breaks sometimes, right? I'm only posting this because it was part of the whole vegetarian week, but honestly, it wasn't that great. I won't even bother posting the recipe because I do not recommend making this! It wasn't terrrrrible, but I found it bland and mushy.

Vegetarian Day #4: Broccoli Salad
This recipe worked nicely as a light lunch, but would also be great as a side dish. Eating vegetables raw gives you the most nutrients, but it's not always easy to find delicious ways to eat raw vegetables. That's where this broccoli salad comes to the rescue! All you have to do is chop up a few ingredients, throw them together with a simple dressing, and enjoy. It was the perfect post-workout lunch.

Vegetarian Day #3: Pasta with Sun-Dried Tomato Pesto and Feta Cheese
Mmmmm...I forget how much I love sun-dried tomatoes. Then I make a fabulous dish like this and I remember how amazingly delicious the things are! This is a quick meal to throw together and full of flavor.
I used whole wheat pasta instead of the refrigerated fresh linguine, and I added the pasta water to the blender (yeah...still no food processor) instead of just stirring it in with a whisk like the directions say. And obviously I added some spinach! I try to put spinach in as many meals as I can because it's one of my favorite super foods!
